Date Muffins! (or loafs)
One of my NEW favourite recipes!
I’ve been thinking of eliminating store bought breads from my diet and I found this recipe to be a great substitute. If you’re going to feed your body, you might as well be eating something that’s actually going to benefit it! Dates are excellent in protein, iron and Vitamin A!
1 ½ CUP chopped Dates
1 CUP Raisins and Cranberries (optional cherries)
1 CUP chopped Pecans and Walnuts (optional slivered almonds, brazil nuts)
2 Cups of flour
1 CUP brown sugar (optional white)
1 CUP water
1 TBLSP butter
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon vanilla extract (optional)
Heat oven to 350, lightly grease baking pan.
In a sauce pan mix chopped dates, butter & water, bring to a boil and set aside to cool. (I boiled mine for about 5 minutes)
When Date mixture is cooled, transfer it to a blender or food processor and blend until it has a paste-like consistency.
Mix in the beaten egg & sugar.
In a separate container, hand mix the flour, baking soda & salt together. Add dry ingredients to the batter. Fold in chopped nuts, raisins and cranberries and vanilla extract.
Pour into the pan and bake at 350 for 35 minutes or until toothpick comes out clean when inserted in the centre.
*In the mornings I toast a slice of date loaf with a bit of olive oil, its soo good! :)
