*Jamaican Seasoned Rice*
Yum! This is one of my favorite go-to ”one pot” recipes, it’s so quick and easy. Perfect for a those nights when you just want to throw together a delicious meal fast! You can switch out the vegetables depending on your choice. I’ve substituted the Callaloo for Spinach, Broccoli, Boy Choy and Cabbage. I’ve also put a pinch of Turmeric inside. Turmeric is a powerful healer due to its anti-inflammatory and anti-oxidant properties. It’s inexpensive, mild in taste, and benefits every system in the body*
Okay enough jibber jabber! Here’s the recipe! Enjoy! <3
2 cups Jamaican pumpkin or butternut squash, chopped in small chunks
1 Small- Medium Tomato; chopped
1 small Onion; chopped
1 C. Mixed veggies
1/2 C. Slivered Carrots
1 C. Callaloo (or Spinach) I used both in this recipe*
2 C. Rice (of your choice; I used Long grain- Parboiled)
2 C. Hot water
3 Tbsp Extra Virgin Olive oil
Sprinkled Black pepper & Sea Salt
Optional: 2 cloves of garlic, Chilli Peppers, Turmeric (for the yellowed colored),
Garnish with Green Onions (Scallions)
Add all the above vegetable ingredients to freshly washed rice in a pot.
Stir to evenly mix ingredients and season to taste with black pepper, sea salt and Extra Virgin Olive oil.
Bring everything to a boil then lower heat to low heat; cover and steam until rice is cooked.
When rice is cooked fluff with fork and serve!
** You may need more water depending on the rice used.
